Mistura is Latin America’s largest food festival and the most prominent celebration of Peruvian cuisine anywhere in the world. Held annually in September in Lima, it brings together more than 300 food stalls, dozens of visiting chefs, cooking demonstrations, and producers from all 25 of Peru’s regions. For anyone serious about understanding Peruvian food culture, it is the single best event on the calendar.

Background

Mistura was founded in 2008 by Gastón Acurio, Peru’s most internationally recognised chef, under the banner of the Apega culinary society. Its stated goal was to celebrate the full breadth of Peruvian cuisine, from street food and market cooking to high-end restaurant technique, and to elevate the status of producers, farmers, and market vendors who rarely received public recognition. The festival quickly outgrew its initial venue and moved to the Costa Verde seafront site, where it currently occupies a large outdoor space over ten days.

What you will find at the festival

The stalls at Mistura are organised by region and by food category. You can move through sections representing the coast, the highlands, and the Amazon basin, each with its own ingredient profiles and cooking traditions. Regional specialities that are difficult to find outside their home areas - like cuy (guinea pig) from the Andes, juane (rice and chicken parcels) from the jungle, and chicharrón arequipeño - are all represented.

Dedicated sections focus on specific product categories: ceviche bars, anticucho grills, cacao and chocolate producers, coffee from highland regions, and the full range of Peruvian chilli varieties. Some of the country’s best-known restaurants run their own stalls, making it possible to try dishes from places that would otherwise require a reservation weeks in advance.

Chef demonstrations and panel discussions run throughout the festival on open stages, and are free with festival entry. These often include internationally known Peruvian chefs alongside regional cooks who rarely appear at public events.

Entry and logistics

Entry to Mistura is ticketed. Prices typically range from approximately USD 10 to USD 20 for a general day pass, as of recent years - verify current prices on the Apega website before attending. Food at the stalls is purchased separately with tokens bought at exchange booths inside the festival grounds.

The festival site at Costa Verde is accessible from Miraflores by a short taxi or rideshare journey, or via pedestrian paths from the Miraflores cliff-top promenade. Weekends are significantly busier than weekdays; if you can attend on a Tuesday or Wednesday, queues at popular stalls are much shorter.

Tips for getting the most from Mistura

  • Arrive hungry and pace yourself - the range of food is enormous and the temptation to try everything at once leads to poor decision-making early on.
  • Bring cash in local currency (soles) for the token exchange; not all booths accept cards.
  • The cooking demonstration stages are first-come, first-served. Check the day’s programme at the entrance and arrive at least 20 minutes early for any session you want to attend.
